Chorizo, Potato and Prawn Comforter

Ingredients

  • 75 g chorizo sausage sliced
  • 1 medium potato
  • 75 g frozen prawns
  • A large chopped shallot
  • 2 cloves of garlic
  • Half a medium tomato
  • Half a tsp of smoked paprika
  • Half a tsp of dried chilli flakes
  • Juice and grated rind of half a lemon
  • 1 tbsp Olive oil or any

Instructions

  1. Peel, quarter and par boil the potato, about 5 minutes will do. Drain the spuds and leave to cool until you can handle them, then cut up into cubes or slices to your liking.

    Slice up some chorizo and fry it in a tiny amount of oil, I was cutting on the bend of the sausage so some of each wedge ended up crispy and some remained firm and sausagey, this made me happy. Remove the chorizo from the frying pan and put aside but leave the spicy oil behind, add a little more oil if you need to and fry the potatoes until they are browned and crispy. Take these out of the pan and put aside with the chorizo. Fry the shallot and garlic for a few minutes and add the sliced red pepper and frozen prawns, season with salt and pepper and add the dried chilli, paprika, lemon juice and rind. When the prawns have warmed through and the red pepper has softened throw the chopped tomato, potatoes and chorizo into the mix and stir until everything is coated in chorizo oil goodness.

    I wasn’t wildly hungry this day so that was enough for me and I felt a hell of a lot better after it, a lovely, warming, easy, stir fry kinda thing, perfect for a snotty November evening. You could serve it with garlic bread or over some rice or mixed in with some noodles perhaps.
